The Lebanese, Indian Exchange

Farrah and I decided that since we love each other's cooking, we should cook together!  To start, I thought it would be cool to try out dishes from our own cuisines, particularly those that we have always wanted to try or want to improve upon.  We started with Kusa Mihshi, a lebanase-style stuffed zucchini dish.

Notes for next time:

  • We used short squash (4 inches is the perfect size) instead of zucchini.
  • We didn't have a coring tool, so we improvised and worked with the edge of a peeler to demarcate the circle, a pumpkin cutter to carve out the cylinder, and a teaspoon to scoop out the inside.
  • We substituted lamb for beef for convenience.  Lamb would probably give it more flavor.
  • The water level should be just above the stack of squash to ensure that the rice gets cooked.
